Listening to the video today while processing and canning my pickled beets. I looked at my hands and your disgruntled commentator about cooking with dirty hands came to mind. Glad I wasn’t filming she would think I was an axe murder in the kitchen 😹. Working hands rock!!

So glad to see someone else use a steam canner. I've used one for 40 years. So much easier than water bath and just as safe. Great info. for people to learn about it. Jam looks really good. I'll add jalapenos next time. Thanks !

Regarding lifting any heavy pot full of water - use a smaller pan to both pour water into it from the faucet and remove hot water from it to the sink. There are also 1 and 2 quart metal measuring pitchers available that work well.

In the U.K. we are taught if you put a knob of butter in that disperses the foam. Works every time and doesn’t spoil the jam or jelly 😃

SOLD! hahaha OK, a friend of mine (Paul's Rule of Thumb) mentioned a steam canner to me and I was intrigued. But after watching you.....I need this in my life! If only to put another notch in my canning belt. hahaha Such a great video, sis......keep up the amazing work. I so enjoy your channel. :D

I made cranberry hatch pepper jam, and peach hatch pepper jam.....delicious. I have made the strawberry jalapeno in the past I am intrigued with the steam canner.I ordered one! I put a pat if butter in my jams to help with the foam. Not sure how it works, but it does. I need one of those canners. Thanks for the info!!!

Crazy I made strawberry jalapeño jam we love it. Also I used a steam canner I bought one about two months ago.

One trick I learned about how to tell if water was boiling was to put a couple coins in the pot. They will make some noise when boiling so won't need to pick up lid and lose all the heat to check if water is boiling. I learned from a Hispanic woman when making tamales. It was her trick that she learned from her grandmother.

Jalapeno peach jam over vanilla ice cream is DIVINE. I've never done jalapeno strawberry! Put that on my "to try" list🥰✅ great video lady!

Just in case no one knows this, but they make a special canning burner. it sets up higher and takes a heavier weight.

Never heard of Strawberry jalapeno jam. Sweet & spicy sounds good. Ive done some canning. To.reduce the foam I use butter & i never have any foam or very little.

I am definitely going to invest in that steam canner...here in Australia, it costs $148 ...yikes! But the reasons you gave is exactly why I need one, didn't know they existed until I came across your channel.....thank you, it's going to make my life easier and lighter to lift.

Kneady sent me over and I as intrigued because I just canned a bunch of strawberry jalapeño jam but it was the first time for me and I don’t think I used enough peppers. I was worried that it would be too spicy.

Welcome Jill! Jalapenos are generally not spicy as long as you remove the seeds. I have a peach habanero jam, and with that one, even though the seeds were removed, it has a little kick to it. But typically, jalapenos are very mild with the seeds removed - and I say this as a spicy food wimp ;)

I see you heat your jars in the steamer. Do you just have the water at a simmer ? I absolutely hated the water bath canner for keeping jars hot! I'm anxious to try this. Just did the gauge test today on my new steamer so I'm good to go tomorrow. You make it seem so seamless! Thank you for the great video.

I have never! 😜 I have never heard of a steam canner but really enjoyed watching this method, Constance. This jam combo sounds absolutely amazing!! This may sound weird but I think an unset strawb-jal jam would be good on homemade ice cream. 😃 Enjoyed this video. Have a great week-end💙katie (PS. When canning, I just keep mine in a warm oven to keep from having to boil them.)

Hello Constance I have watched heather and Paul's video on the steam canner and I think it will be my next buy. Question ? Did you put your empty jars in the steamer to heat up or did you put water in them?

I just put them in empty, and have the lid on the canner and the water simmering while I do all the recipe prep.

Hi there! I checked in the manual, and no, these can not be double stacked. I didn't think so, but I wanted to make sure before I answered :)

You do not stack in water bath canner or steam canner. You do not get a good seal even with 4 oz jars. Ask me how I know.LOL.

Oh my gosh this is amazing jam love the flavor without the heat. My question is how much head space do I leave. I did about the level you did but the recipe didn’t mention it. Also could I do the same with peach jam and jalapeño or would I need to adjust the lemon juice? Thanks for sharing.

I have not found any. You can use it for anything you would hot water bath can.

Could you add a table spoon of butter to the jam to get rid of the foam like you would with grape jam?

Yes, thought a tablespoon would be a lot. Generally 1/4 -- 1/2 teaspoon is all you would need for a typical batch of jelly or jam :)

As long as it could be processed in a hot water bath canner, it could be done in this.

I never learned how to can. 😞 I’m 62! My mom never had time to teach me & my gramma passed when I was little. I’ve been afraid to teach myself for fear of making my family sick. This steam canning may be something I could try.

Absolutely!! Start with acidic foods like jelly or jam. I am completely self-taught, so it can certainly be done!

I really want to try this. I don't want to ruin it, but do you think I could use coconut palm sugar instead of sugar. Or at least some of the sugar? Thanks.

Yes, that should work just fine. I have used CPS in canning recipes before.

@@CosmopolitanCornbread I made it! I used Pomona's pectin and only used 1/4 c CPS. I tried it before putting it in the jars. It tastes awesome! I only got five 1/2 pints. Probably because I didn't add all the sugar :) Thank you.

Does this specific canner work on a flat glass type range.???? My problem with some canners (hot water bath, pressure) don't sit on flat face stones.

I am not certain, but I would imagine that because this is so lightweight, it may work. I would reach out to the company and see what they say.

I made 3 half pint jars of raspberry jam using the same steam canner you have but there was no processing time in the instruction pamphlet so I just processed my raspberry jam for 10 minutes then I left it in the canner for another eight to 10 minutes took the lid off there was still plenty of water in their level the way it is supposed to be how do I find proper recipes now I'm nervous that I did not process correctly do I need to process more time in a steam canner I guess it's the main question please let me know

I would use a full load, so depending upon your jars, it can hold around 8 pints.

Yes, frozen berries are easily used for jellies & jams :)

This is an easy recipe to follow and the leftovers taste great! I just took them out of my new steam canner but the jalapenos seem to have floated to the top of each jar. What should I do? Thank you :-)

Could you stack jars? Is another rack sold with the canner so you can safely stack jelly jars?

I have not seen any mention of that in all my reading. It is my understanding that stacking is only done with pressure canning.

I didn't understand the test. If you wait until it's in the green before you start your timer then what's the point of the test? I have the victorio harvest and it has the same test. I guess I'm just dumb as rocks but I can't understand the reason. I start timing when it gets in the green zone for my elevation.

No problem! You just do the test to see where the high mark is for your area. Then later when you use it, you'll know you are up to the right temp. It is very handy if you aren't sure about your elevation.

I have never heard of any issues with these. I think it is really more of a thermometer, since it is registering the temperature inside the canner, rather than pressure.

Hey there Christina, I wanted to add some more information about this. So when you start using a steam canner, there is a test that you do (and repeat each year) where you find what the high point is for your canner, in your exact altitude. Doing this test lets you know exactly what the "full boil" temp is. And doing it each year, will help you know that your canner is steadily reaching the correct temperature each time. I hope that helps!

I took a marker and made a mark where the gauge showed the high point.

Is there a lot of heat in this Jam? I've always been curious because I cannot stand the heat of jalapenos. I love the flavor of them though. In fact this year I am planting Nalapenos which are jalapenos without the heat. I may just try this jam.....hmmm.

Not at all. Since the seeds are removed, you get the subtle flavor of the jalapeño peppers but zero heat. I have a peach habanero one and that has a touch of heat, but pleasant. This one has none, and I am a wimp :)

Would you be so kind as to measure the bottom of the steam canner? I looked it up on Amazon and they don’t tell you. I have a glass top stove and they are very particular about the size and shape of the bottom of pots and pans. Does it have a flat bottom? Thanks for telling us about it!

The canner is about 12 inches in diameter. The bottom of it is not completely smooth, but the ripples in it are MUCH smaller than those on a typical water bath canner.
