I was a bit worried about the wrinkles and little bit of air left in the bag after I used the immersion method.But I would say its probably about spot on with what you have achieved with that vac sealer anyway. My vac sealer is just beyond hopeless with the umai bags. As soon as you apply any pressure onto the bag to try and pull a vacuum it just seals it immediatly runing the end of the bag.

Thanks for the buffer tip! Umai needs to include those strips with their kit. That plastic 'melts like butter' in my VacMaster.

XX Just angle seal with no buffer ,then vacuum seal and burn hole in angle section 12 $ lost in production, , have lost 4-5 bags trying my dry aging costly, live and learn thinks for the help!,

I have used the same bag over and over for at least 5 times so far. I clean the bag very well and before I hang it out to dry ,I spray it with a half water half Vinegar mix. And I found out you don’t have to vacuum seal it. No meat was spoiled when I use the bag over.

Interesting tip. I’ll give that a shot although I’ve already cut mine down like six times because it doesn’t vacuum seal. I just got done just putting it in the fridge as is and we’ll see how it goes

I've always found that the strongest vacuum is always pulled if you lift the entire device on its side such that the meat and bag is upright. Probably not the best idea on this size of meat that you're dry-ageing though

Have you tried the same bag a second time? I’m wondering if I can seal the rack, cut 2 steaks after 30 days and then 2 other 15 days later, etc. Resealing the bag every time.

These bags are garbage! I've used them multiple times, and get a seal sometimes and sometimes not. Would NOT recommend.

My sealer isn’t wide enough for the bag. Should I just let it bunch up at the ends or fold it onto Itself at the corners and seal together?

what you can do is angle the corners and do them in stages. I wouldn't bunch up the bag

toua cheng Yes that shouldn't be a problem as long as it's at or under 4 degrees Celsius. The fridge requires it to be opened regularly though (according to umai) to allow fresh air to exchange.

Not sure on that but I beleive its a sunbeam sealer which would be typically 12 months. You dont need to get the Umai sealer, you can purchase your own.

Unlikely as the bag may collapse on itself. You can always try but the UMAI always comes with the vac mouse
