The most simple explanation is that in Snow and Dirt mode all the power is directed to the wheel with maximum grip and the other wheels are not spinning. in Deep Snow and Mud all the power is equaliy distributed between all wheels and they all spin even if not touching the ground.

Thanks very much. I have never used Xmode because I didn't know how to turn it on or off ... did the car need to be stopped? But you explain that I could use it while driving along at very slow speed, so now I may try it. Why don't the dealers teach new owners these things???

what is the exact difference between turning VDC off in a lower trim level versus using deep snow and mud X mode on a higher trim level?

Basically, depending on model year Outback you might have a physical button or if it's a 2020 or newer its on the touchscreen.
