Valid consideration can be almost anything that induces the party to a contract to make a promise. For example, if I promise to give you two apples for your return promise to give me an orange, then our promises to exchange apples and oranges satisfy the requirement of consideration. A promise that I will not play music in my house between 2:00 - 4:00 pm so my neighbor can take a nap in exchange for a promise that he'll clean my car after 4:00 pm after he takes a nap may also satisfy the requirement of consideration.

As a general rule verbal contracts are enforceable but there are exceptions.

I can't comment on a specific case but sure, oral contracts tend to be more difficult to prove than written contracts. And yes, if plaintiff lacks evidence plaintiff won't prevail. But it is possible to prove the existence of an oral contract through, say, witnesses, conduct, written records other than an actual contract.
