Ingredients:
2 big eggplants
1 tbsp mustard seeds
1/2 tsp fenugreek seeds
1/2 tsp cumin seeds
1/2 tsp turmeric powder
2 tbsp red chili powder (adjust to taste)
1 tbsp tamarind paste (or lemon juice)
1/2 tsp jaggery or sugar (optional for balance)
Salt to taste
3 tbsp mustard oil (or any preferred oil)
1/4 cup vinegar (for preservation)
1 tsp garlic
1 tsp ginger
3 green chillies
1/4 tsp asafoetida (hing)
