If the recipe is asking for soft peaks for the egg, you may have needed to separate the egg whites from the yolks. You add just the yolks to the chocolate first and separately whisk the egg whites and they turn into a type of foam. Then, you fold those egg whites into your bowl with the chocolate, butter and yolks.

Those chocolate muffins look wonderful. I'm certain your family must have enjoyed them very much. In Japan there is also White Day to make things more reciprocal where as in most Countries there is only Valentine's Day, so it is customary to treat the ladies in our lives with food, gifts, and chocolates. I agree 100% that citrus and chocolate are not good together. A common citrus chocolate treat in Western Countries is called Terry's Chocolate Orange. They are given out on just about every Holiday that treats are exchanged between friends and loved ones. Very common to get them from co-workers as well. I've never been a fan of them though.
