Hi, although you can find some valve symbols on ISA-5.1, this standard is not intended to establish graphical symbols for manual valves. For standards regarding Graphical symbols for diagrams, I suggest you to verify ISO14617. Part 8 is specific for Valves and dampers. Another standard to be considered is the ISO 10628, Diagrams for the chemical and petrochemical industry - Part 2: Graphical symbols. The symbols presented in the video are taken from usual industry practice in the chemical, petrochemical, and oil&gas industries. To validate a valve symbol shown in the P&ID, the engineer must check list of sheet of symbols used in the project. I hope it clarifies your question 😇
