Makes 35 - 40 cupcakes
Recipe:
Vanilla Cupcakes
200g Unsalted butter, at room temperature
350g Caster sugar
2 Eggs, grade A
1 tsp Star Brand Vanilla Flavour
½ tsp Star Brand Egg Yellow Colour
385g Blue Key Self-Raising Flour, sifted
280ml Fresh milk
Coconut Cream Cheese Frosting
80g Unsalted butter, at room temperature
200g Icing sugar
500g Cream cheese, at room temperature
1 tsp Star Brand Vanilla Flavour
30g S&P Santan Sejati Desiccated Coconut
Desiccated Coconut Topping
60g S&P Santan Sejati Desiccated Coconut
1/2 tsp Star Brand Cochineal Colour
1/2 tsp Star Brand Apple Green Colour
Method:
1. Preheat oven to 180°C.
2. Beat butter and caster sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition.
4. Add Star Brand Vanilla Flavour and Star Brand Egg Yellow Colour. Mix until well combined.
5. Stir in Blue Key Self-Raising Flour and stir in fresh milk alternately, a little at a time until well combined.
6. Transfer batter into cupcake liners, filling up to ¾ cup full.
7. Bake for 20 minutes or until golden brown.
8. Remove cake from cake pan and allow to cool on wire rack.
9. To prepare the coconut cream cheese frosting, beat butter and icing sugar until light and fluffy.
10. Add cream cheese and Star Brand Vanilla Flavour.
11. While mixing, gradually add the S&P Santan Sejati Desiccated Coconut and mix until well combined.
12. Frost the cupcakes generously with coconut cream cheese frosting.
13. To prepare the desiccated coconut topping, divide S&P Santan Sejati Desiccated Coconut into two equal portions. Add Star Brand Cochineal Colour to one portion and mix well. To the other portion, add the Star Brand Green Apple Colour and mix well.
14. Sprinkle both coloured desiccated coconut on top.
