Hey there, Chef Ryan! Watching you cook up that Cajun seafood boil was almost as satisfying as trying to find gold in Southern California - almost! The way those clams popped open was like a tiny celebration in each pot. By the way, loved the apron - if you ever drop those limited edition WIP here aprons, count me in for one! Keep cooking up those adventures, looking forward to the next one!

Hey Ryan! Culinarian here The cut you're looking for is called, "On a bias". Which is the way of having slices have just a liiiittle bit more surface area. Works amazing when you're cooking on high heat with oil and more of the product is seared well. It also just looks fancy.

2:40.. I think about investing in a water heater as much as a refrigerator. How much power does yours consume and how long does it take to heat up? - It's a big ticket item, but I feel like on some days it would make all the difference in being actually comfortable or not.

They’re called bias cuts. I worked in kitchens as a prep and line cook in my earlier years and we are taught to cut things on a bias for presentation purposes. Iykyk. Thanks for your videos brah! 🫡

Not just presentation, it also allows the surface to cook faster.

Cutting the sausages on the bias increases the surface area that contacts the pan, which makes for more browning and that beautiful Maillard reaction. It also looks classy AF.

But I still enjoyed the video just like always. Hopefully one day you can try some authentic cajun food.

I think a cook book would be a great idea! Although you use a lot of other peoples recipes, you often change a few ingredients just based off of accessibility and it still turns out great! It would also be as nice platform to highlight the people you got your recipes from like "inspired by, or recipe taken by ..." Putting your own spin on it yet giving the original credit where its due! Also maybe after the recipe, make a page summary on the trip or drive you made when you made the specific dish and of course add your own rating! Maybe even throw in a "Wipe Here" Apron in to the first 100-200 people that buy the book. Just some food for thought ;)
