My name is Matthew and I live in a van. I lost my job due to "cut backs" from the pandemic of 2020 and decided to seriously restructure my life. I am also a single dad who needed to find a solution that would allow me to remain in my daughter's life and plan for her future. After tons of research into #vanlife, I knew it was for me.
From March 2021 until October 2021 I spent my days building out my Chevrolet Express 2500, which came to be known as "Lucky" and as of October 18, 2021 I have been living in Lucky full time.
The build was done with almost no experience on my end and I used the one incredible tool I had at my disposal - the internet - to learn what I needed to build Lucky into a very comfortable tiny home.
I have always had a bit of a passion for being in front of the camera and really enjoy capturing the world around us. This really played into how I was feeling after almost a year of working from home when I "commuted" from the bedroom to the couch. I was starting to feel extremely unhealthy, unmotivated and despondent. I HATED that, and that's not a word I like to throw around. This new lifestyle gives me opportunities I just didn't have before and I am so excited to be able to share it all with you.
I truly believe we all have the capabilities to turn our lives around, should we choose to do so - and if I can inspire you to shoot for something better then I have done a decent job and that will keep me going.
There is more to life than the consume, consume, spend, spend lifestyle I feel we have all been conditioned to follow and I just want to do the best I can for myself first and foremost. Our time is limited and I do not want to waste another second on a lifestyle that doesn't bring me joy!

Wunderbar Matthew. I have always made my French Toast with the ingredients you used today with 2 exceptions. I alternate different types of bread & I mix the cinnamon into the egg mixture. Seems to keep the bread from burning. And Matthew, please don't set yourself on fire leaning over 2 lit burners for butter you never used 😊. We love you just the way you are💓 fuzzy, but not singed😉. Smiling all the way as I watched you through your morning. Hope Stella was just being a Tortie and she is feeling okay. Apparently your end of Canada isn't the only area blowing smoke our way. You're looking in the wrong section for cake pans. There is a cake decorating section that has the pan you need. They have 6 and 8 inches I think. Even smaller too.

I make basic French toast. Two eggs, 1/4 cup milk, 2 pieces of whole wheat bread. Piece of waxed paper on counter to hold bread while cast iron skillet gets hot. Add butter, cook for 2 minutes on each side, then syrup on each piece on the plate and 2 pieces of bacon.

Minus a 7"pan, Aluminum foil might work in a pinch, or a combo with parchment paper. Just a thought 🤔 Fyi: the extra heavy cream is delicious in cereal, or creamer for coffee 🤓

Nancy, the fire pokers were perfect for cooking my sausage over the fire - yum! Everybody just calm down!! 😂 Matthew, in my previous life, I was a cake decorator and never once saw or used a 7" pan, must be a merican thing, lol (as an editor I want to fix that so bad). 😂 Six and eight were most popular. Next time you make French toast, try using anisette toast, instead of bread. Yes, the Italian cookies. Make sure you buy the crunchy toast kind, and not the softer sponge ones. Let them soak in the egg mixture a bit longer than you would for bread. After they are done cooking, dust with powdered sugar mixed with cinnamon, then top with maple syrup.

Bread is packaged that way because it’s gluten free. I noticed that when you bought it. I think it’s stupid packaging, but it’s what they do. 🤷‍♀️😊😉

Gluten-free breads dry out a lot faster than regular, so a baggie is necessary. If it goes cardboard hard, I heat it up in a closed container.

While you're getting ingredients for your cooker pot you should also get your daughter's berries that she always likes because you cannot find it at your parents house and their town they never have the various and she always like staging on blueberries and stuff she gave them in the town where you're at put them in a cooler

wal-mart does carry 7" bunt, and angel food pans. If you want to avoid baking with sugar, then sweet-low is saccharin and keeps it's sweet flavor even when heated, whereas other artificial sweetners don't.
