Pistachio Cheesecake
Pistachio Paste (if you don’t want to make this, you can buy it)
- 2 cups pistachios (boil water then turn off the heat then add the pistachios for 1 minute. Use a towel to help remove the skin)
- 10 tbsp water (add more water or less as needed until it becomes a paste)
Pistachio Graham Cracker Crust
- 1/2 cup pistachios
- 2 cups Graham crackers
- 8 tbsp unsalted butter (melted)
Pistachio Cheesecake Batter
- 40 Oz cream cheese (room temperature)
- 1 cup sugar
- 1/2 tbsp vanilla
- 5 eggs (room temperature)
- 1/2 cup Greek yogurt
- 1/3 cup all purpose flour
-1 cup pistachio paste
Blend until smooth.
Place parchment paper in a 9” spring foam pan.
Bake at 325F for 80-100 minutes (depends on your oven- check online to see if your cheesecake is done).
Place in the fridge overnight.
Pistachio Ganache
- 3/4 cup white chocolate
- 1/4 cup heavy cream
- 1/3 cup pistachio paste
