Variables Set/UpdateContext in Microsoft Power Apps

Just found your site. I am new to PowerApps and have made one App so far. I was always confused by variables watching other site videos - so have not been using it enough; suddenly after watching this one, the whole concept became so clear! Great video. Let's say I have a global variable in my OnStart called varHasAccess and it's set to true. Then I use this variable in a table that is also in my OnStart to either display an item from the table or not. Then within my app, I want to toggle that variable from true to false and as a result, I want to update the table/gallery accordingly, is this possible? I am using the table that I define from OnStart in a gallery within the app but I want to toggle the value of the variable to it reflects within the gallery. is this even possible? Can I refresh the gallery after setting the variable?
