Ingredients
Egg-6
Big Onion-4
Ginger-one medium piece
Garlic-4 cloves
Green chilli-3
Fennel seeds-1/4tsp
Pepper-1/2tsp
Curry leaves -
Kashmiri chilli powder-1tsp
Turmeric powder -1/4 tsp
Chilli Powder-1tsp
Coriander Powder-2tsp
Garam Masala-1/2tsp
Coconut Oil-3tbsp
Tomato-1
Salt-
Sugar-1/4tsp (opt)
Method
Heat oil and add ginger-garlic-fennel-pepper mix and saute ..
Then add onion ,green chilli ,curry leaves and salt..
Saute till brown shade comes .
Then add powders and saute well ..
Now add tomato and cook well..
Then add boiled water and cook ..
Finally add boiled egg and roast well..

Thank you, Veena chechi. I liked the addition of the optional ingredient--sugar. It works to balance the acidity of the tomato, and cuts the spiciness. Perhaps sugar can be part of the main ingredients. Super recipe. I will recommend to others.

Back in Kerala growing up, people had no idea how long to boil eggs. They would boil boil and boil till the egg is just nasty with the sulfur smell and grey tint around the yolk. Finally thank you to You tube, I finally found out how to make perfectly boiled eggs. Exactly 8 minutes of gentle boiling gets me delicious eggs every time. 4 minutes will give creamy egg yolk. Veena I will definitely try your Neer dosa and egg roast. Will surprise my wife one of this weekends.

ശരിയാണ്. കുട്ടികാലത്ത് വീടിനടുത്ത് നല്ല ഹോട്ടലുകൾ ഉണ്ടായിരുന്നു. അവിടുന്ന് കിട്ടിയിട്ടുള്ള അത്രയും ടേസ്റ്റി ആയ എഗ്ഗ് roast veetil പോലും കഴിച്ചിട്ടില്ല. ഉള്ളിയോക്കെ നല്ല രുചി ആയിരുന്നു. അതെല്ലാം പോയി ഇപ്പൊൾ.
