I was really excited to cook this one up in my kitchen because whenever I cook a non-vegetarian recipe which demands for some time & patience, I just love it & usually it is a preconceived notion that what’s there in vegetarian cooking. But this recipe is so rich & the processes involved are easy, yet the layers just made me drool over this recipe while I was cooking it in my kitchen. In fact, I had so much of fun while cooking this recipe as it is such a rich preparation with the ghee, cashew paste, cream & yes, the recipe demands some patience too. Hyderabadi cuisine is a very rich cuisine & it’s known for its deep flavours & rich cooking. Majorly when we think about Hyderabadi food, non- vegetarian food is what comes to our mind first. But yes, there are some very interesting vegetarian dishes as well. I tried this recipe in 2018 when I was there for a wedding in Hyderabad & then I researched about it, the recipe is prepared with some changes here & there by different chefs & establishments, but this is my best interpretation of it. The flavours are mind blowing & I am sure all the vegetarians would love this recipe & it is a must try! Pair it up with some roomalis or some garlic naan & just relish the moment! Cheers!

When I started making this dish today I was cursing myself as I found the steps very tiring. @@ar.heenafathima1332 dear Ms.Heena Its true that increased temperature cause loss of nutrients to some extent certainly but just don't overcook/overheat them for long, Its also true that boiling enhances their flavour e.g. u can't eat raw potato,right.... A little bit heat doesn't make any difference but flavour. Thanks

@@ar.heenafathima1332 I never understood why all these chefs boil the vegetables and drain the water. I always add a bit of ghee and oil and steam the vegetables on low heat. The water extracted from the vegetables cook and steam them really well and i directly add those vegetables into the curry. This way they dont lose their nutrients. I never boiled.
