PAUSHTIK THALI RECIPE
Serves: 4
Prep time :20 min
Cooking time: 40 min
Course: main course veg
For dal
1 cup soaked moong
1 tsp salt
1 tsp turmeric powder
2 tsp ghee
1 tsp jeera
1 tsp heeng
1 tbsp chopped garlic
½ tsp chopped green chillies
1 nos chopped tomato
1 tsp coriander powder
1 tbsp chopped fresh coriander
For sabzi
1 tsp oil
1 tsp jeera
¼ tsp hing
1 tsp chopped ginger
1 tsp chopped garlic
½ tsp chopped green chillies
1 tsp turmeric
2 nos diced potato
1 cup cauliflower cut into florets
1 cup chopped tomato
1 tsp coriander powder
1 tsp red chilli powder
1 tsp garam masala powder
1 tsp amchoor powder
1 cup prepared methi
1 tbsp chopped coriander
Methi
1 tsp ghee
½ tsp garlic chopped
1 cup chopped methi
For pulao
1 tbsp desi ghee
2 nos bayleaf
4 to 6 nos cloves
1 nos cinnamon
2 nos brown cardamom
2 nos green cardamom
½ tsp jeera
½ tsp black pepper
1 cup green peas
1 cup carrot dices
1 tsp Salt
1 bowl soaked basmati rice
Bajre ki roti
1 cup bajra atta
1 tsp ghee
Raita
3 tbsp boondi
½ tsp red chilli powder
½ tsp salt
½ tsp roasted cumin powder
1 cup whipped yogurt
1 tbsp chopped coriander
Bajre ka choorma
1 nos Bajre ki roti
2 tbsp Jaggery
1 tsp desi ghee
Method
For dal
In a pressure cooker add soaked dal, turmeric and salt and cook on high flame till the cooker blow first whistle.
Reduce the flame and cook the dal till cooker blows 3 whistles
For tadka heat ghee in a pan , jeera and allow it to crackle.
Add heeng, chopped garlic and green chillies
Add chopped tomato and cook for a while
Pout the prepared dal in the pan and bring it to boil
Add coriander powder and freshly chopped coriander.
Dal is ready to serve.
For sabzi
Heat oil in a pan, add jeera and allow it to crackle
Add heeng and chopped ginger , garlic and green chillies and cook for a while
Add turmeric and add diced potato and cauliflower florets and cook with lid on, on slow flame.
Meanwhile, heat ghee in a pan, add chopped garlic and saute till brown, add methi and cook it on slow flame it it gets aromatic and set aside.
When cauliflower is done, add chopped tomato and cook furthermore.
Add coriander powder, red chilli powder, garam masala powder and amchoor powder and cook further.
Finish the dish by adding fresh methi and freshly chopped coriander.
For pulao
Heat ghee in a pan and add all the whole spices and allow it to crackle.
Add vegetables and cook it briefly, add salt to taste
Add soaked rice and cook along with vegetables
Add double the quantity of water and cook on dum
After 25 min pulao will be ready
For raita
Mix boondi, salt, red chilly powder and jeera powder and mix well
Add yogurt and mix well with boondi
Finish the raita with chopped coriander.
Bajre ki roti
Make a soft dough with water and fresh bajre ka atta.
Divide the dough into equal portions
On a clean and sanitized surface , dust some flour and with the help of palm pat the dough to make uniform roti
Place the roti on a medium hot griddle.
Apply a layer of water with palm on top of roti.
Turn the side and cook on both the sides
Puff the roti on an open flame.
Apply ghee on side for serving
Bajre ka churma
On an open flame grill the bajre ki roti without ghee till it is crispy.
Mix together jaggery and desi ghee and blend together in a mixer till coarse texture
Your churma is ready.
Serve all the elements together as a thali.
