I've been loving all these vegan Mexican recipes, and your idea to use the bacon bits to make the shortening more like manteca is 🤌

I am here for the cilantro! I always use extra when I'm home, and ask for more when I'm eating out. It's the fresh herb that I use the most. I know you usually buy the pre-chopped version - but when you have fresh cilantro, how do you store it? I have been keeping it in the produce bag from the store, wrapped in a paper towel. Right now, I have the cilantro in a glass with water (like flowers) with a plastic bag over the top. I don't if that's what I should be doing, so I'm curious to see what you think here. As much as I love the stuff, I can't use it up fast enough. I am the only one in my household who likes it.

I have the same problem. 😅 I keep it in a cup of cold water on the top shelf of the fridge and it seems to do ok (aka it dries out and then I get to use it as a dried herb 🌿 lol). Otherwise I chop it up and freeze it in an ice cube tray with either water or olive oil. Pop those out into a baggie and keep it in the freezer.
