Hey Plant Life People! Have you ever heard of vegan Korean rice cakes? I came across this recipe about a year ago from the Korean Vegan and I just had to try it. You can get rice cakes at pretty much any Asian grocery store. Are Korean vegan recipes easy? YES!
This traditional dish is actually called tteokbokki... but we're making vegan tteokbokki!
How to make vegan tteokbokki:
Put about 1/3 a bag of rice cakes into a bowl and massage with sesame oil to cover them well. This is supposed to soften them a little. Chop 4-5 cups of crisp/hard veggies such as peppers, zucchini, carrots, broccoli, onions, green onions or mushrooms. Cook the veggies in some veggie broth until they begin to soften. Make the spicy sauce with 1 tbsp chilli flakes, 2 tbsp soy sauce, 2 table spoons maple syrup and 2 tbsp of gochujang (korean fermented chilli paste.) Add the rice cakes to the pan and then the sauce. Stir until well coated. Add 1 cup of mushroom broth. Reduce heat and simmer until sauce is getting thick. Add cooked ramen noodles if you like, or eat it just as is!
