This was my favorite soup as a child. It's as if the flavors come fresh from the garden. I veganized this soup and took out the white sauce (that had butter and cream and flour) and replaced it with a healthy, low fat bean puree. The results are awesome!!

Must say, what a wonderful and healthy soup, I'm gonna prepare mine tomorrow but would like to use Coconut Milk, instead. Tonight will soak white beans in the water :-) Thank you so much for sharing!

Milk fat is rich in Omega-3 fatty acid which is necessary for brain health. Animal meat is rich in B12 which is essential in preventing brain fatigue/depression, brain fog, memory loss, nerve damage and decreased brain volume in older people. I’m going to have a steak and loaded baked potato today…with a side of celery.

I made this soup yesterday! Deeeelicious!!! I used half a head each of dill & parsley so will make another batch today. Does this soup freeze well? That is my plan. Thank you for sharing. I love that there is not a drop of oil in this recipe.

Thank you! Delicious recipe. I tried a slight variation as I didn't have some of the ingredients. I added some Cumin as I like a bit of spice and I used Rice milk instead of Soy and it came out really well :)

Cool! I am a huge believer in adaptation. I rarely make something the same way twice and it's awesome to touch recipes up with your own tastes.

natural fat isn't bad avocados for example what isn't bad for you nutrients is also important

Can you use the cream sauce for any soup like green pea soup or butter nut squash

I had a big head of celery and decided to make this soup. Lets see how it tastes :) I'm going to eat it with rye bread and avocado!
