Do you think it would be good with just potatoes? Im not big on tempeh, but i love the starchiness of potatoes in kaldereta and afritada!!

Yup! Tempeh is optional. This is a very flexible recipe so feel free to make the adjustments with the potatoes :)

What is the vegan cheese supposed to do? Flavor or texture? I've never used vegan cheese.

Hi! It's for flavor not texture. It should melt in the sauce during cooking. The traditional Kaldereta has cheese in it so I veganize using vegan cheese or coconut milk and sometimes with both. During cooking, the cheese should melt so if using it, please get the meltable vegan cheddar cheese. I hope that clarifies. :)

I don't think there's one, but you can find canned lentils at supermarkets here in the Philippines, or you can skip it too.
