With things like peanuts and hazelnuts, do bear in mind that they have very strong, distinct flavours that will dominate the other flavours - I wonder if the mixture would be nice as a pate if you skipped the bread? If you still want to add the binder, you will need to cook the mixture before eating! You can avoid this by using a flax/chia egg instead - Here’s an idea for an alcohol-free sauce; combine beetroot juice with the onions and plums, and perhaps add something for sweetness like cranberry sauce or redcurrant jelly. If needed, thicken with a little cornstarch slurry - Using different bread will give you different finished results. I initially thought about using panko (Japanese breadcrumbs), but ultimately settled on a standard brown bread. I wanted to use a really dark brown like a pumpernickel, but the shelves were pretty empty! It could even be worth trying corn flakes - Before spotting the frozen buckwheat, I had considered cooking some black rice to put in the nut roast, so feel free to add some grains in there. I reckon toasted jumbo oats would be lovely
