I've jumped on the PSL bandwagon and here is my homemade recipes for a vegan (dairy free) Pumpkin Spice latte!

PSL Syrup
3/4 cup water
2/3 cup coconut sugar
1/3 cup pumpkin puree
1 tbsp pumpkin pie spice
1/2 tsp vanilla extract
Whisk together water, coconut sugar, pumpkin puree, & pumpkin pie spice together in a small saucepan over medium high heat. Bring to a boil, stirring occasionally. Reduce heat to medium low and simmer for 3 minutes until slightly thickened. Stir in vanilla extract, and remove from heat.
Espresso PSL
2-3 tbsp syrup
1/2 cup almond milk3 tbsp espresso
Stovetop PSL
1/2 cup almond milk
1 1/2 tbsp pumpkin puree
1/2 tbsp raw sugar (I used sugar in the raw)
1/2 tbsp vanilla sugar
1/2 tsp pumpkin pie spice
1/2 cup strong coffee
In a small pan set on medium, stir the almond milk, pumpkin puree, and sugar until the pumpkin dissolves and the mixture is steaming. (do not let it boil). Remove from the burner and mix in the vanilla extract and slowly add the pumpkin pie spice while stirring so it doesn't clump. Pour coffee and milk mixture into a mug and sprinkle with cinnamon. Enjoy!
