TIP: Instead of water - use a meatless broth to rehydrate curls. Either chickenless, or beefless works great. Soak about 30 min and then squeeze liquid out so not too wet then add to whatever recipe you are using. It just kicks up the flavor from the start. I spotted your sweet dog peeking at you while you were working LOL

over 15 years ago before i chose vegan, i was always told that "al pastor" meant using the adobo spices, i did not hear that here. guess the trick is the guajillos. this is amazing!! TY for this. and glad you finally brought out the lime, i was worried you would not!! take care.

I think it really just depends the part of mexico people are from or how they were raised! This is how my parents make their tacos al pastor (+ real meat) & they are from Colima MX. Everyone cooks different 💕 Definitely an experience! & I agree about the lime.. super necessary with tacos 😉 Thanks for the llve!!!

Looks delicious! If you are vegan look into taking taurine supplements. I literally started losing my vision in my late 30's due to a taurine deficiency from being plant based for 18 years.

You can get taurine from seafood in much higher amounts than in any meat. I still want to try your recipe because I still don't eat meat. Big studies are coming out now on the benefits of taurine for longevity.
