Another day another Stir-Fry, this time just some vegetables from the fridge.
This is pretty simple and easy to make and won't take too much time.
Ingredients:
5-7 Potatoes
3 Onions
1.5 Courgette/Zucchini
1/4 Cup Broccolini
1 Carrot
4-5 Cloves of Garlic
2-3 Tbs Coriander
3 Tbs Olive Oil
Spices :
1 Tbs Cumin & Coriander Seed Powder
1 Tbs Pilau Masala Powder
1 Tsp Chilli Flakes
1 Tbs Tomato Paste
2 Tbs Soy Sauce
Method :
Peel the Potatoes and Slice them and soak in water
Peel, Wash and Slice the Onions and Set aside
Peel and Slice the Onions
Crush, Peel, Wash and Slice the Garlic
Peel, Wash and Slice the Carrots
Wash and Cut the Courgettes/Zucchini
Add 3 Tbs Olive Oil to your heated Wok
Sauté the Onions
Add the garlic and stir, then add the coriander and stir until all browns
Add the coriander and cumin seed powder
Add the Chili Flakes, then add the sliced potatoes
Add the Pilau Masala Spice, then add the Sliced Carrots
Keep turning the mixture, then add 1 tbs Tomato Paste
Add the Courgettes/Zucchini and continue turning the vegetables
Add the blanched Broccolini
Cover to cook
Lastly add the 2 tbs Soy Sauce and Serve while hot.
