Venison chili Texas style (no beans) from scratch

1 lb venison (sub bison or lamb if no venison available.)
2 cup tomato sauce
2 cup beef broth or stock
Small can tomato paste.
Chili powder, salt and desired seasoning
Butter and flour for rue
(You can add a dash of ketchup as well if you want a touch of sweetness.

just loaded the freezer up with elk this year, so will replace my deer recipes with ground elk. thanks for easy recipe. Elk was on special draw from Kentucky this year!
