Braised vegetables with vegetarian abalone and vegetarian sea cucumber on the 1st day of Chinese New Year

初一鮑魚海參粗齋
材料:
髮菜一兩
綠豆粉絲半斤
素鮑魚12隻
素海參10隻
龍芽菜一個
雲耳20克(預先用清水浸軟)
雪耳一個
炸支竹適量
冬菇10隻(預先燜腍)
南乳一磚
腐乳一磚
處理:
1. 髮菜,清水浸軟,清水沖洗幾次,揸乾水。
2. 龍芽菜,打橫切段,清水洗乾淨。
3. 雪耳,切細舊。
4. 炸支竹,清水浸至完全軟身,切段。
5. 素鮑魚,放大碗內。
6. 素海參,放大碗內。
烹調:
1. 大火在鑊內燒熱油500毫升。
2. 粉絲,一半份量,放鑊內,炸一炸,放碟上。另一半,清水浸軟。
3. 雲耳、雪耳及支竹,放鑊內炒香。
4. 加入南乳,炒勻。
5. 加入冬菇,炒勻。
6. 加入冰糖2大粒。
7. 加入龍芽菜。
8. 加入調味料:
a. 蠔油一湯匙
b. 生抽一湯匙
加入大滾水500毫升,冚蓋,大火滾起燜3分鐘。
9. 加入炸好的粉絲,冚蓋,燜3分鐘。
10. 加入髮菜,繼續燜。
11. 另一邊,在鑊內加入海參及鮑魚,加入老抽一茶匙,炒勻,加入冰糖一粒,加入清水100毫升,大火滾起,繼續燜。
12. 龍芽菜已差不多燜腍,加入餘下的粉絲,撈勻,冚蓋,燜3分鐘。
13. 完成,放上碟。
14. 鮑魚及海參已燜腍,放在龍芽菜上。
15. 可享用。
Braised vegetables with vegetarian abalone and vegetarian sea cucumber on the 1st day of Chinese New Year
Ingredients:
Nostoc 1 tael
Mung bean vermicelli 0.5 catty
Vegetarian abalone 12 Nos.
Vegetarian sea cucumber 10 Nos.
Long cabbage 1 No.
Black fungus 20g (has been soaked well in advance)
Snow fungus 1 No.
Fried beancurd appropriate amount
Mushrooms 10 Nos. (have already been braised well in advance)
Preserved beancurd red 1 cube
Fermented bean curd 1 cube
Preparation:
1. Nostoc, soak in tap water until it turns soft. Rinse several times. Squeeze it.
2. The cabbage, cut in lengths horizontally. Rinse thoroughly.
3. Snow fungus, cut in small pieces.
4. Fried beancurd, soak in tap water until it turns soft. Cut in lengths.
5. The abalone, put in a big bowl.
6. The cucumber, put in a big bowl.
Steps:
1. Heat up 500ml of oil at high flame in wok.
2. The vermicelli, half of the amount, put in the wok. Deep fry for a second. Put on plate. The rest, soak in tap water until it turns soft.
3. The fungus and beancurd, fry well in the wok.
4. Add in preserved beancurd red, fry well.
5. Add in the mushrooms, fry well.
6. Add in 2 big cubes of rock sugar.
7. Add in the long cabbage.
8. Add seasoning:
a. Oyster sauce 1 tbsp
b. Light soya sauce 1 tbsp
Add in 500ml of boiled-up water. Cover up the wok. Heat up at high flame and braise for 3 minutes.
9. Add in the deepfried vermicelli. Cover up the wok and braise for 3 minutes.
10. Add in the Nostoc and continue braising.
11. On the other side, add in the cucumber and abalone in a wok. Add in 1 tsp of dark soya sauce, fry well. Add in a cube of rock sugar, and 100ml of water. Heat up at high flame and continue braising.
12. The cabbage has been almost softly braised, add in the rest of the vermicelli. Mix well. Cover up the wok and braise for 3 minutes.
13. Complete. Put on a plate.
14. The abalone and sea cucumber have been softly braised, put on top of the cabbage.
15. Serve.
