支竹雞槌燜脆米粉
材料:
急凍雞槌8隻
支竹12小條
排粉半包
豆豉10粒
蒜蓉一茶匙
辣椒仔2隻
蔥粒適量
處理:
1. 雞槌,清水解凍。
2. 支竹,清水浸軟。
3. 雞槌解凍後,倒去水分,用粗鹽一茶匙,乸5分鐘,去除雪味、腥味,及加入鹹味。
4. 排粉,清水浸軟。
5. 辣椒仔,去籽,切粒。
6. 豆豉,清水洗乾淨。
7. 雞槌已醃了7~8分鐘,揸出血水,清水沖洗乾淨,擎乾水,廚紙索乾。
8. 支竹,清水洗乾淨,揸乾水。
9. 排粉,清水沖洗乾淨,擎乾水。
烹調:
1. 大火在鑊中燒熱油一湯匙。
2. 雞槌,加入生粉一茶匙,撈勻,放鑊內,轉中慢火煎香。
3. 雞槌,一面已煎至金黃色,反轉繼續煎。
4. 在鑊內加入油2湯匙,繼續煎。
5. 雞槌,兩面都已煎至金黃色,放上碟。
6. 排粉,放鑊內,中慢火煎香。
7. 排粉,一面已煎至金黃色,反轉繼續煎。
8. 在鑊內加入油一茶匙,繼續煎。
9. 排粉,兩面都已煎至金黃色,上碟。
10. 大火在鑊內燒熱油一茶匙。
11. 爆香蒜蓉、豆豉,及辣椒仔,加入油一茶匙。
12. 加入雞槌,爆香,轉慢火。
13. 加入調味料:
a. 蠔油一湯匙
b. 老抽一茶匙
c. 胡椒粉適量
d. 糖一茶匙
轉大火,炒勻,加入清水300毫升,加入支竹,冚蓋,大火滾起,轉中火,燜5分鐘。
14. 預備適量生粉芡。
15. 雞槌,燜了5 分鐘,加入生粉芡,燜至收汁。
16. 燜好。
17. 雞槌,放好在排粉上,放好支竹。
18. 辣椒粒及蔥粒放上面。
19. 完成,可享用。
Braised crispy rice sticks with chicken drumsticks and beancurd
Ingredients:
Ftozen chicken drumsticks 8 Nos
Beancurd (short) 12 Nos.
Rice sticks half pack
Black preserved beans 10 Nis.
Garlic sauce 1 tsp
Chili 2 Nos.
Green onion cubes appropriate amount
Preparation:
1. The drumsticks, defrost in tap water.
2. Beancurd, soak in tap water until it turns soft.
3. The drumsticks have been defrosted, pour away water. Season with 1 tsp of cooking salt for 5 minutes, to remove unpleasant smells and add some salty tastes to them.
4. The rice sticks, soak in tap water until they turn soft.
5. Chili, remove seeds. Dice in cubes.
6. Preserved beans, rinse with tap water.
7. The drumsticks have been seasoned for7-8 minutes, squeeze the blood comes from them. Rinse thoroughly. Drain. Dry with kitchen towels.
8. Beancurd, rinse with tap water. Squeeze it.
9. Rice sticks, rinse thoroughly. Drain.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. The drumsticks, add in 1 tsp of tapioca starch, mix well. Put them in the wok. Turn to medium-low flame and fry well.
3. The drumsticks, one side has been fried into golden yellow, flip over and continue frying.
4. Add in 2 tbsp of oil in the wok, and continue frying.
5. The drumsticks, both sides have been fried into golden yellow, put on a plate.
6. The rice sticks, put in the wok. Fry well at medium-low flame.
7. The rice sticks, one side has been fried into golden yellow, flip over and continue frying.
8. Add in 1 tsp of oil in the wok and continue frying.
9. The rice sticks, both sides have been fried into golden yellow, put on plate.
10. Heat up 1 tsp of oil at high flame in wok.
11. Garlic sauce, black beans and chili, fry well. Add in 1 tsp of oil.
12. Put the drumsticks, fry well. Turn to low flame.
13. Add seasoning:
a. Oyster sauce 1 tbsp
b. Dark soya sauce 1 tsp
c. Pepper appropriate amount
d. Sugar 1 tsp
Turn to high flame, fry well. Add in 300ml of water and beancurd. Cover up the wok. Heat up at high flame. Turn to medium flame and braise for 5 minutes.
14. Get ready for appropriate amount of tapioca sauce.
15. The drumsticks, have been braised for 5 minutes, add in tapioca sauce and braise until the sauce becomes thick.
16. Braise well.
17. The chicken drumsticks, put on top of the rice sticks. Put beancurd in rows.
