⬇️⬇️English recipe follows⬇️⬇️ 三文魚頭湯、香煎三文魚尾 材料: 急凍三文魚頭半個 急凍三文魚尾一條 蕃茄2個 豆腐一磚 薑一舊 處理: 1. 三文魚,清水解凍,加入粗鹽一湯匙,乸10分鐘,去除雪味、腥味,及加入少許鹹味。 2. 蕃茄,清水洗乾淨,一開八。 3. 薑,清水洗乾淨,拍鬆。 4. 豆腐,清水洗乾淨,切粒。 5. 三文魚,刮淨魚鱗,清除內臟,清水沖洗乾淨,剪齊魚尾,擎乾水。 6. 煲滾清水一升。 烹調: 1. 大火在鑊內燒熱油一湯匙。 2. 爆香薑片。 3. 三文魚,廚紙索乾,放鑊內,轉中慢火煎香。 4. 三文魚,一面已煎至金黃色,反轉繼續煎。 5. 取出魚尾,反轉魚頭,加入豆腐繼續煎。 6. 豆腐,一面已煎至金黃色,反轉繼續煎。 7. 豆腐,兩面已煎至金黃色,加入蕃茄炒香。 8. 轉大火,加入大滾水一升,冚蓋,大火滾10分鐘。 9. 湯已滾好,倒入大碗內。 10. 三文魚尾,可伴以沙律醬食用。 11. 完成,可享用。 Salmon fish head soup, pan-fried salmon fish tail Ingredients: Frozen salmon head half No. Frozen salmon tail 1 No. Tomatoes 2 Nos. Tofu, both sides have been fried into golden yellow, add in the tomatoes and continue frying. 8. Turn to high flame. Add in 1L of boiled-up water. Cover up the wok and boil for 10 minutes. 9. Soup has been boiled well, pour into a big bowl. 10. Salmon tail, can be served with salad sauce. 11. Complete. Serve.
