⬇️⬇️English recipe follows ⬇️⬇️ 薯仔炆雞翼: 材料: 雞中翼2磅 薯仔(大)1個 薑6片 芫荽1棵 處理: 1. 雞翼用清水解凍10分鐘。 2. 雞翼1開2,再用清水浸10分鐘。 3. 輕手揸出雞翼內的血水。 4. 沖乾淨雞翼,擎乾水。 5. 粗鹽乸雞翼10分鐘去除雪味、雞腥味及加入鹹味。 6. 薯仔去皮,切細舊。 7. 薑切片。 8. 芫荽切碎。 9. 雞翼已完全解凍,洗淨,擎乾水。 10. 廚紙索乾雞翼。 11. 雞翼調味: a. 生粉2茶匙 b. 豉油1茶匙 c. 胡椒粉少許 d. 油1茶匙 攪勻,醃10分鐘。 烹調: 1. 放2湯匙油落鑊,大火燒熱。 2. 放薯仔及薑,煎2分鐘 。 3. 煎了2分鐘,反轉薯仔及薑。 4. 薯仔已煎透,放雞翼落鑊。 5. 當雞翼一面轉金黃色,反轉繼續煎。 6. 薯仔和雞翼一起兜勻。 7. 放1粒細冰糖。 8. 放1茶匙鮑魚汁,炒勻。 9. 加入滾水,剛蓋過雞翼面,用中火炆5分鐘就可以了。 10. 上碟。 Braise chicken wings with potatoes: Ingredients: Mid~joint chicken wings 2 lbs Potato (large) 1 No. Ginger 6 slices Coriander 1 No. Preparation: 1. Defrost chicken wings with tap water for 10 minutes. 2. Cut each chicken wing into 2 pieces. Soak in tap water for 10 minutes. 3. Squeeze the chicken wings lightly to release the blood from the wings. 4. Rinse the wings thoroughly and hang dry. 5. Season chicken wings with cooking salt for 10 minutes to remove the unpleasant smells and tastes and add some salty taste. 6. Peel the potatoes and dice in small cubes. 7. Slice the ginger. 8. Chop coriander well. 9. Chicken wings have been defrosted completely. Rinse thoroughly and hang dry. 10. Dry chicken wings with kitchen towel. 11. Season chicken wings: a. Tapioca starch 2 tbsp b. Light soya sauce 1 tsp c. Pepper little d. Oil 1 tsp Mix well and season for 10 minutes. Steps: 1. Heat up 2 tbsp oil at high flame in wok. 2. Put potatoes and ginger, fry for 2 minutes. 3. Have already fried for 2 minutes, flip over potatoes and ginger. 4. Potatoes have been fried well. Put chicken wings at the same time. 5. Flip over chicken wings as one side has been turned in colour gold. Continue frying. 6. Fry potatoes and chicken wings well. 7. Add 1 cube of rock sugar. 8. Add 1 tsp abalone sauce, fry well. 9. Add boiled up water, just covering up the wings, braise at medium flame for 5 minutes. 10. Serve.
