It's not the first thing you think of in the context of Chinese food, but I think it's good news! I saw one of these videos where potato pancakes were being made in the market, on a big scale! I wanted to move there. The idea of getting a hot baked potato on the street, and putting a bunch of seasonings on it (that's what it looked like, maybe you pick them yourself) seemed very attractive. Every time I watch one of these videos I want to move there.

I don't think people are eating a lot of uncooked food! Once it's deep-fried or otherwise cooked... I'm a lot less concerned. People are doing this year after year, maybe they have it figured out!
