@Ralph Reilly I am glad that you find that this takes practice. But I stumbled on many tutorials in which the use of sharpening jigs is disregarded, and the ability to use whetstones to sharpen freehand seen as the badge of honor of a serious knife owner.

I was a chef for 8 years and ruined the first 2 knives I put on a whetstone and it took me a couple of years and plenty of ruined cheap knives and bringing the edge back to learn to use a steel well!

I'm really pleased with this! It works like a charm kzbin.infoUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ Takes less time than my old electric sharpener because it can take more off the knife faster, and then it smooths out nicely with the finer grit polisher. I don't know how long it will last before the grit wears away, but I wouldn't mind having to replace it every once in a while.

Ich persönlich bevorzuge zum Schleifen zwar den guten, alten Schleifstein (ja, man braucht viel Geduld damit 😄), aber der Victorinox Sharpener ist natürlich im "Feld" viel praktischer und absolut empfehlenswert. Gutes Tutorial. Meine persönlichen Favoriten sind der Fällkniven DC3 (weil er super kompakt ist) und P400 Schleifleinen auf einer Moosgummi-Unterlage. Das gibt einen konvexen rasiermesserscharfen Schliff. Das Schleifleinen und die Unterlage kosten zusammen keine 5€.

Enjoyed this Tips and Tricks video even more the second time around. I have been re-watching some of the earlier videos and continue to learn. I carry a small diamond file with me to tune up my blades when I am away from my cabin. I only recently saw that Victorinox has a small Dual-Knife Sharpener tool and would like to know what you think of this tool. My diamond file seems to work really well but I am always on the look out for some better system. Thank you

I got the work sharp field shapener, after your previous visited.it is fantastic 👏 I like your idea of putting the learher and compound on the Victorinox sleeve....but maybe they could put a 20 degree champher, on the plastic handle. AS a guide....where you put your thumb.....and Bob's your uncle. ?

This is a good Tool. But sometimes we are not equiped for knife-sharpening. Once I had to sharpen my knife and yes you can do it with a simple rock. It worked out ok but not beautiful and it took much more strokes

sand stone type rocks best if you are stuck, wet it sharpen as normal, leather strop

Great tips Felix! It is a bit of an issue to keep the angles specially on the larger knives. I have switch to convex grinds on my fixed blades which makes it a bit easier, as using a piece of sandpaper and a belt to sharpen and honing is a snap. BTW, I am waiting on your newest book to arrive at my doorstep and am very excited to see what awesome projects are inside. Catch you later Felix!

Hallo Oliver. Wenn Du einen Zahnstocher in deinem Messer hast, kannst Du einfach eine Ecke etwas Abfeilen, bis die Nadel passt. Das funktioniert sehr gut. Beim meinem Schon etwas älteren MiniChamp konnte ich die Nadel neben dem Kugelschreiber einstecken. Aber vielleicht geht das auch nur, weil die Schale nicht mehr 100% stramm sitzt. LG

My EZE-LAP sharpeners came from the US and are still cheaper, than a Victorinox. I wouldn't spend so much money, only to have a Victorinox sharpener. Viele Grüße in die USA

Maybe somebody already mentioned this but wouldn't it be easy for Victorinox to cast a small 20° (plastic) slope to the sharpener where you now put your finger? Only enough to guide the blade to a 20° angle. Or maybe that's even something you can constuct yourself and glue to the plastic handle?
