Hey Joe, I have a YS640 and a Gateway Drum as well and have learned a few tricks from a couple of pros. Try this with your drum next time and I think you'll get both the smoke profile and tenderness you're looking for. It's the direct heat from the drum that causes them to cook faster, but also they cook a little more "aggressively" so what I've learned is to take your internal temps higher, to about 210*. Then if you let the steam off of your meat, re-wrap, and then rest a while.....the tenderness really come into play. I do the same with my briskets on the drum. I think the direct heat and fast cook time just don't allow for that meat to break down like a low and slow cook, but this method was told to me by a couple of guys after my initial frustrations and it really works! Joe I'm glad I found 1 of your older videos, I'm having a problem with my yoder ys640s not producing a good smoke flavor, it burns very clean. My yoder flat top 24×48 does a great job, I love my yoder's but it's hard to use my pellet when my other grills produce a better taste, any help from you would be greatly appreciated, I have the same grills as you....except the frontiersmen, your the best youtuber using yoders I can find, keep up the great content!!!

What about adding a smoking tube to the pellet grill to increase the smoke production? May enhance the smoke flavor if used before wrapping. Thanks for the video!

Hard to compare charcoal vs pellet cooks. You can't replicate the smoke flavor you get when fat drips on the hot coals on a pellet smoker. Another great video Joe!! 👍

Another great comparison video joe! I found the pitboss comp blend have a weaker smoke profile compared to other 100% species wood like a lumberjack. When you did your gateway vs pit barrel pork butt comparison did you feel they had the same charcoal wood flavor? Keep up the good work man!

I sell, and demo Pit Boss, and Louisiana pellet grills. Dropped Traeger cause they sell them in Costco/Walmart bathrooms if they have space. A pellet cookers does everything good. For low n slow.... A drum, offset , Weber Kettle , wsm, all do it better. Nothing beats real wood. Pellets all have binders, and made out of leftover wood. Best pellets I have found are Traeger or Louisiana. Don't get comp blends.

My Yoder YS640S is on the way... I’m not tempted in any way to get a barrel smoker or stick smoker, etc. But I was eager to see via your video what I may be missing. I have a Camp Chef pellet smoker today and I notice a big difference in the type of pellets and brand of pellets. Do you think that a different type/brand could have closed the gap? It would be interesting to run this experiment between an offset stick smoker and the Yoder. I think that would be more comparable. You didn’t speculate on what caused the difference. What do you thin made the difference?

Thanks for watching Emmgee! It's hard to duplicate live fire cooking with pellet smokers. Live fire has a greater BBQ flavor. Now, pellet smokers do produce amazing tasting food but with a little less smoke flavor. My workhorse smoker is still my YS640.🤘

On my Yoder YS 640, the temp on my upper grate runs about 20-25 degrees cooler than the “set temp”, which I believe is calibrated to represent the center of the lower grate. This may contribute to the Yoder cooking slower in this test. Nice comparison...thanks. I am getting Gateway Drum smoker for Christmas, so this comparison was very helpful. Keep up the good work.

The gateway cooks a little hotter than what the temp gauge says but most importantly it's the air flow from the intakes that speeds things up

Yes sir David, the bottom grate gets really hot so I only cook on the bottom when it's a lower temp and longer cook like a 17 hour brisket at 250. Congrats on your drum, you're going to love it!👍🏽

Bomb looking pork. Try using lumberjack brand pellets competition blend in your Yoder. Try doing the comparison again and then give your review. It will blow your mind on the difference. Hope to see a brisket comparison like this soon. Maybe your stick burner and your pellet smoker.

I've heard the smoke flavor of those pellets aren't that strong. Lumberjack and bbq delight seem to give people the best smoke flavor.

Hello MrPanther, I've used lots of pellet brands and these have a really good smoke flavor but it's hard to beat the flavor of true charcoal or wood. I've been cooking on Yoder for about 5 years now and it does really good but my Gateway Drum and all of my other smokers produce a better smokey flavor. Thanks for watching buddy! 👍🏽

HEY JOE, great comparison of the pork butts, but I am with you I like the more smoke in the meat. The Yoder YS 640 is a great smoker but doesn't put out enough smoke taste for me.
