In the last Kingdom Rush Origins easter egg, the spear-thrower hedge is a reference to Ironhide’s first game, Rise of the Olympians. The other guy looks like certain versions of Link, to me, but I can’t be sure.

Definitely Link because of the hat, sword and shield, but for 100% certainty, Link is originally left-handed in older games. And if you look at the bush carefully, you'll see he's carrying the sword with his left hand.

There are actually two Easter eggs that Captain didn’t mention. At 2:04 you can see one deer and one little deer in the forest, referencing Disney’s Bambi and her mother. The other reference is the Ewoks from Star Wars you can find in the trees

I believe he's mentioned the Ewoks before, and the two deer referencing Bambi is sort of a stretch. Now, if you click on them and the mother deer gets shot, then most definitely. I'm pretty sure he's dedicated an entire episode to that game, so if it is a Bambi reference, he most likely mentioned it in that video.

A thing that should be mention about ESO's dark soul easter egg is that the knight is a ghost. Part of Dark soul's multplayer aspect was seeing a fellow player as a ghost doing whatever they are doing in their game. Since everyone needed to use the bonfires, you would often see someone's ghost sitting at the fire.
