Some think it's too long to pronounce: HCMC. Some don't like the name and prefer Saigon. Whatever the reason, I like the fact that you still call it Saigon.

I haven't seen that many Vietnamese street food clips, but I do notice a different 'way' behind the prep work, as in like technical skill. You know? Fingers go here. Fingers go there. 10:32. It's pretty cool. What do they call that skill with the fingers and knife? Never seen it before. It combines activities, is what comes to mind. That would make sense that they use scissors. Pretty sure. If you implemented scissors as prep cutlery to the Chinese, you'd be getting blood from finger cuts in your food, every other day. Anyway. The famous Vietnamese noodles look like mostly the broth. I was wondering how people could eat 7 small meals a day. So. Like 7 bowls of noodles. Never actually tried it, but it's big with ex-pats from across the globe.
