Egg fried rice is easy to make. I made it for the first time yesterday. Didn't come out perfectly but it was still delicious. It was so good I made it again for breakfast today. I'm hooked!

Combining both your styles could be extra good. Start by coating the rice with egg then push it to the side and use another egg to create the "chunks" like Aunty did.

Hi!, just one little question.. cooking rice, boiling 20 mins and after steaming for 15 more.. what kind of rice do you use? if i try cooking rice that long here with what i have available (italian or basmati rice), it will turn into an overcooked glue paste.. is that rice unrefined/unpeeled or just "harder"? thanks!

That is wax gourd, in China, We call it 冬瓜( Dong Gua ). Lamb meatballs with wax gourd soup is a classic dish.

The authentic Chinese chicken essence I've seen is just boiled down and dried chicken stock. It does not normally contain lots of salt and MSG like the bouillon cubes we see in the US. That allows them to add salt and MSG according to needs of the recipe.
