That local chicken is delicious; the way it is prepared is just like what we dayak of borneo did, by burning to remove its feather/fur, and getting the birds skin burnt a bit till oil comes out; then cutting into pieces before cooking. Mind you...when cook inside the bamboo (pansoh) + ginger + lemon grass + garlic + tumeric and place on open fire, this local chicken is very delicious and aromatic 👍😋

If we wash the meat before cooking the burned flavour which gives the taste goes away. And by the way it's cooked well so no risk of any diseases. Hehe no offense to anyone, just an information.
