in the air ride clip, that minigame has a bunch of speedboost strips on the runway, they're the little shimmering stripes. pressing A to make your ride touch the ground on those strips gives you a speedboost, but vinny didn't have to do that because his wheelie scooter is always touching the ground, so he got them just by riding over them

Look at the little triangles that circle the postman as you target him, and count each one as they pass over top of his head (or just 12 o' clock if your camera angle is bad) until you reach 19 (assuming low input lag) and press A just as the 19th passes the top of his head. Guarenteed 10.0 seconds every time when done correctly.
