I don't know the exact details, but Wii remotes have a function that lets them send data at 100hz vs 50hz, but it uses a flag in the bluetooth configuration that's intended for something else. Dolphin (and any usermode application) is unable to set it, meaning that remotes run at the 50hz mode even when games want 100hz; Dolphin is usually able to mask that, but with audio there are problems. That, combined with the general low quality of the speaker, makes for some extra crust. (If I recall correctly, this doesn't affect emulated wii remotes, but I haven't actually messed with this much myself.)
