Madam - I watch your videos. Your explanation is simple without any blabber and with gentle and polite intonation. I was expecting that you will advise to add buttermilk before allowing to ferment,; thought to find mistake, but you did not give the opportunity!! Yes the cooked millets should not be added with anything to allow the gut friendly probiotic culture to be developed during the process of fermentation - anything added will interfere with the process! Each millet has grain specific culture that is attracted during fermentation - that is therapeutic!! One suggestion is that the vessel instead of closing with a plate can be tied it's neck with cloth so that the bacteria can effectively penetrate through the cloth due to its porous nature
