I sure wish I knew you were here!!! My husband and I were waiting for the black & white slow motion on the beignets. Mardi Gras float art has changed so much. It used to be hand crafted with paper mache. Nate, it was so much fun to watch you at New Orleans! My husband and I went a few years ago, and we totally enjoyed it too. Your adventures brought back all of the good memories and made me want to go all over again. New Orleans is a beautiful place to visit! And the food is amazing!!! We loved their charbroiled oysters especially, but the beignets are out of this world too--to me, no place else has ever duplicated Cafe du Monde's recipe successfully. I’m so glad you finally made it out to Louisiana. If you’re still in the state, you should head west about 2 1/2 hours to Lafayette. New Orleans is more creole where true Cajun country is more central Louisiana Acadiana area. I would love to share with you some resources to explain the true history of the Acadian/Cajun people.
