Green Smoothie (makes 1 serving)
half a banana
1/4 cup of blueberries
1 cup of almond milk (or milk of your choice)
2 handfuls of spinach
1 scoop of protein powder (I use the Vega one!)
half a scoop of Vega Greens
Italian Minestrone Soup (makes 6 servings) THIS IS NOT MY OWN RECIPE
1 tbsp olive oil
4 oz pancetta chopped
4 cloves of garlic minced
2 carrots chopped
1 onion chopped
1 stalk of celery chopped
1 tbsp dried oregano
1/2 tsp hot pepper flakes
1/4 tsp salt
1/4 tsp ground pepper
1 can of diced tomatoes
6 cups of chicken stock
1 pkg (300g) of fresh baby spinach
1 can of Romano beans, drained and rinsed
1 cup tubetti or ditali pasta
1/3 cup fresh Italian parsley
2 tbsp chopped fresh basil
In a saucepan, heat your olive oil on medium/high heat, add pancetta and cook for 2 minutes (or until crisp). Reduce heat to medium and add garlic, carrots, onion, celery, oregano, hot pepper flakes, salt and pepper, and cook for about 5 minutes (or until they are softened). Add tomatoes and chicken stock and bring to a boil. Add spinach, beans and pasta, and reduce heat, cover and simmer for about 20 minutes (or until pasta is tender). Stir in parsley and basil, and your all done!! This soup can be refrigerated for up to 2 days and should be reheated before serving!
