chicken tortilla soup recipe:
ingredients
* olive oil ( ~ 1 tbsp)
* yellow onion (1)
* bell peppers (3) (red, green, yellow)
* jalapeño (optional)
* minced garlic (~ 1 tbsp)
* chicken breast (3)
* corn (1 can)
* black beans (1 can)
* red enchilada sauce (1 can) (i used old el Paso)
* chicken bone broth (4 cups) (i used kettle & fire)
* taco seasoning (1 packet) (i used siete mild)
* dry seasonings (onion powder, garlic powder and paprika) (as desired)
toppings (optional)
* avocado
* corn
* shredded 3 blend cheese
* light sour cream
* cilantro
* jalapeño
* lime
* tortilla chips (i made my own)
steps:
* season (to your liking) and cook chicken breast then set aside
* in a large pot add olive oil, diced onion, diced bell peppers, diced jalapeño and minced garlic. on medium heat, sauté until it becomes fragrant and onions are translucent
* slightly reduce heat and add in corn, beans, red enchilada sauce, chicken bone broth, taco seasoning packet, chicken breast & dry seasonings
* cook for about ~20-25 min or until chicken is soft enough to shred; stir occasionally
* remove chicken and shred; then add back into pot
* cook for another 5-10 min and then serve
* add desired toppings to your bowl
