Hi there! 🙋‍♀ Here in Oortugal, on the night of december 24 (Consoada) everyone eats boiled potatoes with codfish and cabbage - it's a tradition. So fun to hear about your Italian Christmas Eve preparations! The Pannetone looked scrumptious. Baccala is a favorite in Greek culture, too, where it is battered and fried and called “baccaliaro.” It’s served with garlic mashed potatoes and garlic beets.

Too late for this year but Dollarama always has decorated parchment that you can grease for your Panettone for next year! We have a cool house too so I use a heating pad and wrap the bowl in a towel. The salt cod fish in my family was done as a soup with a light cream sauce or baked in 18 % cream and non salted butter (smoked salt cod for that one) my Dad was French Canadian too!

mbakaliaos in Greece and usually we cook it on the 25th of Mach, ( religion and National day off) My mother used to fry it with butter, and served it with mashed potatoes or walnut bureau with a lot of garlic. Very delicious. It is imported from Portugal. Happy holidays to everybody.

I've learned to help dough to rise, can place in microwave or in oven for warmer place than on counter. Of course, do not hv oven on! The heat of lightbulb is enough in oven.

I did use the microwave for the panettone and it worked well. I also have a proof setting on my oven, but I don’t usually use it.

Hi Sandy - thank you so much for the fabulous vlogmas. Yours is one of my favourites every year! I also live in Ontario and we keep our house pretty cool, so dough rising is a challenge for me too. I have had success keeping proofing dough in the oven (turned off) with the oven light on. I also use this trick when I need to hurry my sourdough starter along! I do have to put a very large, bright post-it reminder over the Bake button on my oven so I remember to remove the dough before preheating the oven! I know some other bakers also have luck leaving dough in furnace rooms or near hot water heaters.
