Pinned comment because nobody reads video descriptions. This was in a 2020 Volvo FM 500 Euro 5. The steereo in this truck has a touchscreen, if you press the three dots ... on the left of the screen you should get the option to restart the system to fix the Bluetooth failing to connect. If the steereo is not a touchscreen version, then the procedure in this video will do the trick. After the park brake symbol turns off, wait at least 20 seconds before starting the truck. I'm not too sure what would happen if you start it while the computer is rebooting.

Thank you. Today my FH wouldn't recognise my phone that has been paired for months and wouldn't allow me to connect a new device. I just tried what you showed and I have Bluetooth again! It was also not showing incoming calls for the past few days so I'll see if this fixes that too

Probably try a new USB cable. Don't buy a cheap crappy one, a lot of USB problems are usually due to crappy, or faulty cables.
