南乳雞翼煲:
材料:
急凍雞中翼2磅
處理:
1. 雞翼用清水解凍。
2. 解凍後,用鹽乸10分鐘,去除雪味及腥味,及加入鹹味。
3. 擎乾水,用廚紙索乾。
4. 調味料:
a. 南乳1磚
b. 南乳汁2湯匙
c. 腐乳1磚
d. 鮑魚汁1湯匙
e. 生抽1湯匙
f. 老抽1湯匙
攪勻,醃30分鐘。
烹調:
1. 白鑊加入1磚南乳、1磚腐乳1大粒冰糖及300毫升水,煮溶冰糖。
2. 放雞翼落鑊。
3. 雞翼滾起後,收中慢火,煮5分鐘。
4. 另一邊用最慢火燒熱煲仔。
5. 放雞翼落煲仔,滾起,完成。
Chicken wings with red bean curd in pot:
Ingredients:
Mid~joint 2 lbs

Preparation:
1. Defrost chicken wings with tap water.
2. Season with cooking salt for 10 minutes after defrost, in order to remove unpleasant smells and tastes and add some salty taste to chicken wings.
3. Rinse thoroughly and dry with kitchen towel.
4. Season chicken wings with:
a. Preserved red bean curd 1 cube
b. Red bean curd sauce 2 tbsp
c. Preserved bean curd 1 cube
d. Abalone sauce 1 tbsp
e. Light soya sauce 1 tbsp
f. Dark soya sauce 1 tbsp
Mix well, season for 30 minutes.
Steps:
1. Melt 1 cube preserved red bean curd, 1 cube preserved bean curd and 1 big cube rock sugar in plain wok at medium flame.
2. Put chicken wings into wok.
3. Turn to medium~low flame after boiling up. Cook for 5 minutes.
4. Heat up the pot at low flame.
5. Put chicken wings in pot, wait for boiling up. Serve.
