Now I’ve never played a game of this style before, but the abundance of AOE attacks just makes me wonder how anyone could die in this game if they aren’t fighting either a boss or a gang of ranged opponents.

Trying not to die is almost never the issue with Musou games (at least not in the ones I've played). You're far, far more likely to get a Game Over if you fail to guard your army's keeps from falling or fail to keep your NPC allies alive. Also, in order to get a high ranking on missions (which you'll need to do in order to earn rewards and even to progress in some cases), you typically need to finish within a specific amount of time, while keeping the damage you've sustained low (which again, is sometimes not a problem, though some bosses and enemy playable characters are liable to give you trouble), AND while getting a high enough kill count somewhere above a thousand (which, depending on the mission, could come about naturally, or could actually be pretty difficult due to how thinned out the enemy hordes are).

When it comes to Musou games, the rank-and-file enemies are barely a threat to you at all. As was stated, your main concern is making sure objectives are finished, the people who need to stay alive stay alive, the important bases don't fall. The moblins and stahls are basically there to make you feel like a badass as you cut them down by the dozen like sheathes of wheat.
I had no idea that Hyrule Warriors had so much coolness put into it. The Cucco was a funny surprise too. I still wouldn't get the game, but it at least has style.
