In the Southern USA, when we clean fish.. we have to leave out the offal for the yellow jackets. Always leave out some heads or some parts you don't use for the yellow jackets to find. Otherwise they will come to your cleaned fish and you may get a few stings. We call it a Spring offering. Lovely dish.. and the trout look amazing. Love how you've prepared it. Good luck. Speak for yourself, most Australian and New Zealand chefs catch, clean and cook their meat and seafood dishes themselves. It’s also not uncommon for them to grow their own vegetables and herbs, it’s not a big deal.

Thank you for all your hard work. I can’t imagine all you do in a day. I’m very grateful for your channel. I never saw fish cut that way - I’m going to try my hand at that next time I catch some trout. I want to make my own smoker- I love smoked trout. I never thought to stuff them with vegetables but now I see how you do it and that looks fabulous!!! What was the dark liquid you poured into the frying veggies? Balsamic, liquid smoke, soy? Gosh those trout are beautiful. I’ve heard of golden trout but I’ve yet to catch one. Your vegetables are beautiful. I want one of those big pans to fry in. I know you won’t have time to read this but I know the wind will carry the goodness to you someway. God bless you.
