Great cook, pleased to see a simple seasoning used as opposed to many of the heavy US style rubs we see. Great to let the meat shine 👍. Amazing cook! I've bought a kettle joe and tried a fall off bone leg of lamb but coals burnt out after 4 hours. Temp was around 100c. I noticed you used very large chunks of lumpwood. Should I be using large bits of charcoal to keep them burning for longer?

Larger chunks will burn much slower than small lumps, giving you a longer cooking time as well as maintaining a more consistent temperature 🌡 😀
