Cooking time: 20 minutes
■Ingredients (serves 2-3)
Salmon...2 slices: 299 yen
Celery...1 stalk: 199 yen
Shimeji mushrooms...1/2: 70 yen
Olive oil...2 teaspoons
Water...500ml
Soy milk...80ml: 20 yen
Salt and pepper...a little
Consommé cube...1: 16 yen
Lemon slices...2-4 slices: 40 yen
Mochi barley...1/4 cup: 44 yen
Total: 688 yen (serves 2-3)
■How to make
①Separate the stalks and leaves of the celery and cut them into bite-sized pieces.
Slice the onion thinly and cut the salmon into 4 pieces and remove the small bones.
Cut the stems of the shimeji mushrooms and prepare them.
② Add olive oil to a pot and fry the celery stalk and onion until translucent, then season with salt and pepper.
③ Add the celery leaves and salmon, then add half the water, cover the pot and simmer for 3 minutes.
④ Skim off the scum, add the remaining water, add the consommé and glutinous barley and simmer for 3 to 5 minutes.
⑤ Turn off the heat and add the soy milk, serve on a plate and drizzle with extra virgin olive oil to finish.

■How to make
1. Cut the zucchini into thin slices and the tomatoes and avocado into blocks.
2. Place on a plate and top with salt, pepper, lemon juice, and EV olive oil.
