Day 1: Animal Kingdom & Magic Kingdom
Day 2: EPCOT & Hollywood Studios (use the skyliner)
Disney no longer restricts park hopping before 2pm.
Just be aware that if the 2nd park is at capacity, they won't allow you to enter.
