Am preparing lwc , in those videos, they are using apex only for fetch data using SOQL & remaining all logics & operations they are using LWC . Before lwc we have written all logics & operations in APEX, for now we write all logics in LWC and only soql in Apex ? Real-time jobs , Upcoming new projects related to LWC also like this ?

It depends on the best tool for the situation. Lwc does not handle complex backend logic very well.
